Josh Wood: Our first goat cheese, the flower chevre has always been our most recognizable cheese. The flowers are edible pansies. They are mild enough in flavor that the they do not change the taste of the cheese, making the Flower Chevre the perfect pick for the traditionalist chevre fan. The flowers are grown in our cheesemaker’s garden on the island. Despite its simple appearance, the flower is very delicate, and takes the longest to package. Therefore, they are packaged by the most experienced cheesemakers.

Sommelier Jamie Drummond recommends: A dry Muscat from Alsace would mirror many of the floral elements and hence make fine dancing partners. Just the other day I enjoyed this cheese with a sparkling moscato from Italy.
